Meatloaf is one of my absolute favorite dishes. It’s the one thing that I always ask my mom to make for me on my birthday every single year. Well, I finally got her recipe down pat and I gave it a twist of my own.
With my son having the flu and us being home yesterday it seemed like the perfect time to make meatloaf for dinner since meatloaf takes a while to bake. If you’ve never made meatloaf before don’t fret – it’s not that hard. You throw together some ingredients, put it in a pan, and bake it. Viola! Let’s jump in!
What You’ll Need
- Roaster
- Ground Beef
- Onion
- Saltine Crackers
- Eggs
- Salt
- Pepper
- Oregano
- Minced Garlic
- Bacon
- Ketchup
Now the recipe calls for 2 pounds of ground beef but since it’s just Ray and I, I only used a pound and cut the recipe in half. This recipe is incredibly simple. You will begin by putting the beef, chopped onion, crushed saltines, spices, and eggs in a large mixing bowl.

Once you have all the ingredients in the bowl you’ll want to combine everything using your hands. This is the messy part.

Everything should be sticking together nicely. Once you’ll combined everything you will form the mixture into a loaf and place in the roaster. You will then layer with bacon – about three strips – and top with ketchup. * side note: if you don’t like ketchup that’s okay. I’m not a huge fan of ketchup but it tastes pretty good when baked on top of a meatloaf. *

Also – do not forget to add a little bit of water in the pain to keep the loaf moist. If you plan on making gravy you will add water to the roaster and a few beef bouillon cubes.
This has been the best meatloaf I have ever made. So delicious and flavorful.

Ingredients
- 2 lb. Ground Beef
- 1 Lg Onion, Yellow – chopped
- 1 Sleeve Saltines, crushed
- 2-3 Eggs
- 1 TBSP Oregano – roughly
- Salt, to taste
- Pepper, to taste
- 1 1/2 TSP Minced Garlic – roughly
- Ketchup
- 5 strips Bacon
Instructions
- Preheat oven to 350 Degrees.
- Combine beef, onion, saltines, eggs, and seasonings in a large mixing bowl using your hands.
- Form mixture into a loaf and place in roaster pan.
- Add water to roasted to keep loaf moist.
- Top with bacon (uncooked) and ketchup.
- Place in oven and cook for 2-3 hours.
Notes
Add beef bouillon cubes to water in the roaster if you plan on making gravy.
