This extra cheesy, bacon baked mac n’ cheese is absolutely to die for; it’s so rich and flavorful. This recipe will feed a large crowd or provide a lot of left overs for the family. I know it was absolutely perfect for me when I had my wisdom teeth taken out. That was my lunch for the week since I couldn’t eat anything else. It was perfect and even tasted good re-heated (I’m weird about eating leftovers because of the way they taste re-heated). 


Baked Mac n Cheese

Extra Cheesy, Bacon Baked Mac n' Cheese


Baked Mac n Cheese


  • 1-2 lb. Bacon
  • 1 lb. Elbow Pasta
  • 1/2 Cup Unsalted Butter (1 Stick)
  • 1/2 Cup Flour
  • 1 1/2 Cup Milk
  • 2 1/2 Cup Half&Half
  • 4 Cups Medium Sharp Cheddar Cheese, grated
  • 2 Cups Gruyere Cheese, grated
  • 1/2 TBSP Salt
  • 1/2 TSP Black Pepper
  • 1/2 TSP Paprika


  1. Cook bacon, chop, and set aside.
  2. Preheat Oven to 325 Degrees and prepare 9 x 13 baking dish.
  3. Cook pasta, drain, and set aside.
  4. Grate cheeses.
  5. Melt butter in dutch oven over medium heat.
  6. Sprinkle in flour and whisk.
  7. Cook one minute, whisking often.
  8. Slowly pour in milk/half & half while whisking constantly, whisk until smooth and combined.
  9. Whisk often over medium heat until thick.
  10. Stir in spices, 1/2 bacon, and 1/2 cheese until melted.
  11. In large mixing bowl, combine pasta and cheese sauce.
  12. Pour half of the mixture in the baking dish.
  13. Layer with Cheddar cheese, Guyere, and bacon.
  14. Pour the remaining mixture in and top with cheeses and bacon.
  15. Bake for 15 minutes or until cheese is bubbly and golden.
