Breakfast foods are a huge hit in my house. My son and I love basically anything that has to do with breakfast.
During my last trimester I would make a batch of pancakes every day and that would be my breakfast, lunch, and dinner. The thing I love the most about this recipe is that it is so simple and so fast to make. You only need six ingredients to make the best homemade pancakes you’ll ever have.
For me this is the perfect dinner to make when I don’t really feel like cooking. My son is a terrible picky eater but pancakes for dinner are by far his absolute favorite and it only takes about 10 – 15 minutes to prepare, make, and serve.
Look at those delicious, golden cakes. It makes my mouth water just looking at them. I love my pancakes more on the fluffy side so I tend to use just a tad less milk.
1 ½ cups of all-purpose flour
3 ½ teaspoons of baking powder
1 teaspoon of salt
1 tablespoon of sugar
3 tablespoons of butter, melted
1 ¼ cup of milk
In a large bowl combine the flour, baking powder, salt, and sugar. Then add the remaining ingredients and stir until completely blended. I use my ½ measuring cup to scoop out the batter onto the griddle. Viola! Within minutes you have the best pancakes ever!
I recently had someone ask me if my pancakes get hard when I re-heat them the next day. No they do not. Generally, I have enough left over that I save and heat up for breakfast the next morning and they are still as light and fluffy as they were when I first made them.
